3 Parts Non-Iodized Salt
2 Parts Garlic Salt
1 Part Pepper
1/2 Part Hickory Smoke Salt
Sprinkle on all sides. Cook over charcoal (with cover like a Weber). Soak a handful of
hickory chips and place wet chips in small aluminum pan in center, charcoal on outside.
Takes about an hour for 2.5 to 3 pounds to cook. Place Tri-Tip fat down for 10 minutes, finish cooking with fat side on top.
